risotto. The higher than normal amount of soluble starch released during
cooking, makes Arborio rice the ideal choice for Risotto recipes. |

Arborio
rice is used when a creamy consistency is needed in a recipe such as
risotto, soup, or rice puddings. This variety of rice is easy to prepare
and takes about 20 to 30 minutes to cook.

CREAMY RISOTTO
RECIPE

Cooking Risotto is about slowly developing the multiple layers
of flavors released by all ingredients. It usually begins with gently
sautéing finely chopped shallots in extra virgin olive oil without
browning them. Mix in the rice, and stir for two to three minutes until
it begins to pearl up. Now the rice is ready to receive the liquid of
your choice. (Wine and/or stock made from fish, chicken, beef, or
vegetable).
After 20 minutes, when rice is tender, add in remaining flavors
according to your recipe. Vegetables, butter, herb, and grated Parmesan
are usually mixed in when the rice hasn’t yet absorb all the stock.
