Linguine and Zucchini “Spaghetti” with Colavita Grilled
Artichokes
Use a mandoline
slicer* to create fresh zucchini spaghetti; toss with
linguine; add the deep flavor of Colavita Grilled Artichokes
and you have an easy and delicious vegetarian meal.
Serves 6
Ingredients:
1 pound COLAVITA
Linguine, cooked according to package directions,
˝ cup pasta water
reserved
4 medium fresh
zucchini, cut into spaghetti, using the julienne blade on a
mandolin slicer*
3 tablespoons
COLAVITA Extra Virgin Olive Oil
1 container of
COLAVITA Grilled Artichokes, drained and coarsely chopped
1/2 cup heavy cream
1/2 cup freshly
grated Parmesan cheese
1 1/2 teaspoons
grated lemon zest
Salt and pepper, to
taste
Preparation:
In a large skillet,
heat the oil over medium high heat; add the zucchini and sauté
until crisp tender; about 3 – 4 minutes. Add the cooked
Linguine; artichokes; toss well. Add the cream, cheese and
lemon zest; toss well to combine. Moisten with pasta water if
it seems to dry. Taste and adjust seasonings with salt and
pepper.
*If you don’t have
a mandoline slicer, you can slice the zucchini very thinly
into a julienne or into slices.
