BRUSCHETTA WITH TOMATO, BASIL & GRILLED PEPPER |

Needed Ingredients: Italian country bread or Ciabatta,
tomatoes, fresh garlic, fresh basil.
Note:
Suitable to vegetarians

INGREDIENT LIST |
2 1½ inch slices of Italian country bread
1/4 cup snipped fresh basil leaves
2 Garlic clove halved
4 teaspoons olive oil |
2 large ripe tomatoes on which you cut an
X
trough the skin at
the bottom end
1 grilled red pepper finely slice
Salt grinder and pepper grinder |

In the large Sauce Pan start boiling
about 50 oz of water
ET: 10-12 min. Preheat oven
to 450º |

Prepare ingredients: Peel &
halve garlic, snip basil leaves from stem & chop finely |

Slice bread, and with a
teaspoon, spread and rub olive oil on both sides |

Place bread slices in an oven
tray, and roast both sides until golden and crisp

With a sharp
knife, cut
an X trough the skin at the bottom end of each tomato |

Water is now boiling, poach
tomatoes in hot water for 30
seconds |
 |
Place tomatoes in cold water to
cool off for 2 minutes

Peel, partially remove seed and
finely chop tomatoes |
 |
Remove bread from oven, and let cool off for about
1 minute |
 |
Rub each bread slice with the cut side of a garlic half and
arrange on a plate |
 |
In a small bowl, mix tomato, red
pepper, basil, salt, pepper to taste and a dash of olive oil |
 |
Spoon mix onto the bread slices, and serve. |
