Olive Tapenade
This Tapenade can
be simply spread over a slice of bread or as condiment over
grilled fish, hamburger, pork chops or pasta.
Serves 4
Ingredients:
Makes
about 1 cup.
1 teaspoon minced garlic 1 teaspoons
fresh thyme leaves 1 teaspoon chopped fresh rosemary 5
Dal Raccolto Anchovy filets
1 teaspoon drained Dal Raccolto Capers
1 Colavita Crushed
Olive tray 1 tablespoon Colavita extra-virgin olive oil
Freshly ground black pepper to taste
Preparation:
In a
mortar, pound together the garlic, thyme, capers, rosemary,
and Anchovies. Gradually add the olives and the olive oil.
Pound to a coarse paste.
Alternatively, combine all ingredients in a food processor,
pulsing to a coarse paste.
Do not over process.
