Colavita Grilled Zucchini, Feta and Prosciutto Crostini
Colavita’s Grilled
Zucchini brings deep rich flavor to every bite of these simple
to prepare crostini.
Makes about 12
crostini
Ingredients:
1 baguette (not
sourdough)
1 container
COLAVITA Grilled Zucchini
4 ounces Feta
cheese, crumbled
6 ounces thinly
slice prosciutto, cut into 1/2 inch wide strips
Preparation:
1. Slice the
baguette into diagonal slices about 1/2 inch thick. Bake in a
low, 325 degrees F, oven until crisp, about 10 – 15 minutes.
2. Remove the
zucchini slices from the container, drain briefly on paper
towels. Cut into
pieces that will fit on the crostini.
3. Place the
zucchini pieces on the
crostini, sprinkle with Feta and pile a piece of prosciutto on
top.
4. Place
under the broiler for a few minutes, or until the prosciutto
just begins to
crisp. Take care not to burn.
