Saffron is the most
precious and most expensive spice in the world. The Saffron filaments,
or threads, are actually the dried stigmas of the saffron flower,
"Crocus Sativus Linneaus". |

It takes about
210,000 stigmas, picked from about 70,000 flowers, to yield a pound of
saffron, making it the world’s most precious spice. Handpicked, the
stigmas are dried in sieves over low heat, and then stored immediately.

Cooking with Saffron

Although Saffron is
only cultivated in the plains of Navelli (Zafferano
Purissimo dell'Aquila),
San Gimignano , Sicily, and Sardegna, it's delicate flavor is present in
the most famous Italian dishes. Saffron is used in Antipasto

pasta, rice
(risotto
allo zafferano),
vegetables, seafood, lamb stew (Agnello allo Zafferano), chicken,
