Beef Vegetable Soup
Yield: 4 servings
Ingredients:
1 pound beef boneless chuck, cut
into ½-inch cubes
1 Rachael Ray Beef Stock In A Box
1 teaspoons salt
1 Carrot cut into ¼-inch cubes
1 Turnip cut into ¼-inch cubes
1 Large potato cut into ¼-inch cubes
1 Leek (white part only) finely slice
1 Celery stalk cut into ¼-inch cubes
1 Medium onion finely chopped
1 Sprig of Thyme
1 Freshly ground pepper
2 Tbsp coarsely chopped flat parsley
Preparation:
Bring Beef stock to boil, add beef cubes, salt, Thyme, black
pepper, and cook for about 1 hour.
Add diced vegetable and cook until tender; about 30 minutes.
Garnish with parsley, and serve with toasted garlic bread.
