Colavita Sun-Dried Tomato Tapenade
Spread this
versatile tapenade on toasted bread for an instant appetizer,
or
thin it with a little additional oil and add some pasta water
to make a great
pesto to toss with pasta. It works especially well with whole
wheat pastas,
such as Colavita’s whole wheat penne.
Makes about 12
servings
Ingredients:
1 container
COLAVITA Sun-Dried Tomatoes,
undrained, coarsely
chopped
8 oil-cured
black olives, coarsely chopped
1 – 2 cloves
garlic
2 tablespoons
capers
2 tablespoons
toasted pine nuts
¼ teaspoon red
pepper flakes
¼ cup parsley
¼ cup basil
1/8 cup
parmesan cheese
1/3 cup
COLAVITA Extra Virgin Olive Oil, or as needed
Preparation:
Place the
sun-dried tomatoes with the oil, olives, garlic, capers, pine
nuts
and red pepper flakes in the work bowl of a food processor
fitted with the
metal blade. Pulse until finely chopped. Add the parsley,
basil and
parmesan. Pulse until chopped; turn the machine on and slowly
pour the
olive oil into the chute; run just
until incorporated. Do not over process.
