Also known as dopio zero
flour or 00 flour, this versatile soft wheat flour is traditionally used in Italy for making home-made
pasta, gnocchi, Ciabatta bread, Pizza and pastry.
Colavita has been
milling flour since 1912 in the Molise region of Italy. Sowed in
October-November,
the Molise wheat sprouts before the first frost, flowers early spring, and is
ready for harvest by early July.
This Type "00" flour is
made from
finely ground soft Apulian winter wheat.
